CHRISTMAS CAKE

After your guests have digested, finish the day off with a cup of tea and a slice Christmas Cake in front of the fire. Preheat your V-Zug Oven and make this delicious Christmas Cake ahead of Christmas day, save time and stress!

225g (8oz) butter

225g (8oz) brown sugar

6 eggs

285g (10oz) plain flour

1 tsp mixed spices

55g (2oz) ground almonds

Rind of a lemon and orange

375g (1 pkt) sultanas

375g (1 pkt) raisins

375g (1 pkt) currants

100g (1pkt) glace cherries

100g (1pkt) chopped peel

1 large cooking apple, grated

1 75ml bottle of whiskey, brandy or rum

Method:

  • Wash, dry and cut cherries into eights
  • Put fruit (sultanas, raisins, currants, cherries and peel), chopped and ground almonds, and the grated rinds into a bowl. Pour ½ the whiskey over, mix well. Cover with cling film and allow to stand for at least 1 hour, overnight is ideal.
  • Preheat the oven with fan setting.
  • Cream the butter and the sugar, add the eggs one at a time, and mix each one in thoroughly adding sieved flour each time, until all the eggs and flour have been added.
  • Add the fruit mixture, mix in gently but thoroughly
  • Put in the prepared tin (use a 8” or 9” round tin). Smooth the top, making a hollow at the centre, use the back of a large metal spoon dipped in hot water to do this. Do not make the hollow too deep.
  • Position the cake on the middle shelf in the oven. Bake in the preheated oven, check regularly, if browning quickly or if cracks are forming turn the oven down and cover with a double layer of brown paper.
  • The cake is baked when an inserted skewer is “clean” when taken from the cake. Cool the cake in the tin on a wire tray
  • When cool, prick the top of the cake with the skewer and pour the remainder of the whiskey over.
  • Store wrapped in 2/3 layers of greaseproof paper, and finally in tinfoil.
